Military food is perhaps the clearest example of cuisine being designed around an extreme environment. The modern MRE, or Meal, Ready-to-Eat, is built for soldiers who may have no kitchen, refrigerator or reliable access to fresh food.
The contents are heavily packaged and engineered for long shelf life. Depending on the ration, a single pack can contain a main meal, crackers or bread, snacks, a dessert, drink mix and accessories such as utensils and heating components.
The strange part isn’t necessarily what’s inside. It’s the fact that an entire meal can be designed to sit around for months or years, survive transport through difficult conditions and still be eaten without conventional cooking. In other words, the MRE isn’t really trying to compete with restaurant food. It’s trying to be there when the restaurant doesn’t exist.
